Jimmy -

I graduated from Woodrow in '66 ( same year as Chester and I guess a year after Billy ). I had forgotten the Ellis boys were in the Brockles Family Tree (long time and lots of water under the bridge). I got a hankering for some "B.S.D." and wondered it it was still available. Sadly, it is not but I will try to make some per your recipe. I will send you my dad's Ferris' Barbeque Sauce recipe - I have to go find it first . . . GREAT WEB SITE !

I went to school (Robert E. Lee and later) with Maria Brockles. I'd enjoy catching up with some of the old crew. My dad owned several restaurants (Ferris' BBQ) in Dallas but we liked to go out to eat at Brockles. I could sit down with a box of Ritz crackers and eat a whole jar of Brockles Special Dressing.

To Mike Ellis - if you get this = Big Hello ! Tim

Dub. A bit more paprika will make it a bit bolder in color. It's up to you. I just use regular paprika. The thickness of this homemade recipe is just like the original as I remember it. Yes, it was used on salads also. Some simply spoon it onto a wedge, others a regular lettuce and tomato dinner salad.

Some have asked about thinning it. I don't. But on occasion my mother used to thin it with a little buttermilk -- I think merely to make it go further.

Jim, I made up a batch and I added the maximum of what you advised, ie 1 1/2 T garlic powder, etc. It is delicious! Two questions-- I remember it, as a boy being more orange, or thousand island looking. Am I incorrect?
I also remember using it on crackers, as other have said, but it was supposed to go on a salad, was it not? It is very thick, but tasty. I used a spicy paprika that gave a little kick to it. Your comments? Regards!

My daughter just made me another quart of this stuff - and I tried it on some lettuce - the last time I had Brockles on anything other than crackers was back in the 1950s - If I remember correctly, the restaurant didn't really put it on a 'salad,' but just on a wedge of lettuce with a cherry tomato on the side? Anyway, it was outstanding! Now my son, in his 20s, is addicted to Brockles - and so a new generation of Brocklophiles emerges!

I just made my second batch and learned something I'll pass on. Use GOOD QUALITY mayo! First time I used Kraft and it was wonderful, but this time I used a retail store brand (yes, mayo.) and I can tell the difference.

Still so close to my memory of the original as to be scarry, but something a little off from the first time. Used the store brand because they didn't have Kraft in the traditional round quart jar.

Jim, I was a small boy during WWII. My mother and our family would come to Brockles to eat. I was so impressed with the dressing, the waitresses, the round windows, etc. I used to think it looked like a ship with the windows.

I do remember there used to be Brockles's Jr. on Interstate 20 as we drove to Kilgore, TX.

I now live in Minnesota, but the dressing is something I have talked about for years. Evidently, from the above conversations, you have released the recipe. Where can I find it? Regards, Dub Fields
